Blueberry Zucchini Bread Recipe: A Family Favorite
This Blueberry Zucchini Bread is one of my favorite ways to turn some of that summer abundance into something we can enjoy long after zucchini season is over. When the garden starts giving us more zucchini than we can eat fresh, I know it's time to start baking.
Preheat the oven to 350°F and prepare your loaf pans sprayed with a bit of cooking oil.
Wash and grate the zucchini.
For small or medium zucchini, I leave the peel on. It adds a little color and you won't notice it in the finished bread. If you're working with a large, overgrown zucchini, peel it and remove the seeds before grating. Large zucchini can have a bitter peel.
2 Cups Zucchini
Add the grated zucchini to a large bowl. Add the eggs, granulated sugar, softened butter, and vanilla extract. Stir until well blended.

In a separate bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
Add the dry ingredients to the zucchini mixture. Stir just until combined.
Before adding the fruit to the batter, gently toss the blueberries with 1 tablespoon all-purpose flour. This helps keep the fruit from sinking to the bottom of the bread. Gently fold in the blueberries.

Divide the batter between your prepared pans.
Combine the sugar and cinnamon for the topping and sprinkle it over the batter.
Use small or medium zucchini when possible. The peel can stay on and adds a little color to the bread.Peel large zucchini. If your zucchini has gotten very large and overgrown, peel it and remove the seeds before grating. The peel can become bitter.Drain frozen zucchini. Thaw frozen shredded zucchini completely and drain off excess liquid before using.Don't overmix. Stir the dry ingredients into the wet ingredients just until combined.Fold in blueberries gently. This helps keep the berries intact.Make several flavors. If you're baking several batches, try a different add-in in each batch.Cool completely before freezing. Wrapping warm bread can trap moisture and affect the texture.Freeze mini loaves individually. This makes it easy to thaw just what you need.

One batch makes approximately four 3 x 5.5-inch mini loaves, two 5 x 9-inch loaves, or one 9 x 13-inch pan.
