How to Make Creamy Italian Sausage Soup
Brown the sausage and onion. Add the Italian sausage and diced onion to a large soup kettle or Dutch oven. Cook over medium heat, breaking up the sausage as it cooks if using ground sausage. Continue cooking until the onion is translucent and the sausage is cooked through and beginning to brown. Drain the excess fat.

Pour in the chicken broth and add the uncooked rigatoni. Stir to combine.
10 Cups Chicken Broth, 8 Ounces Rigatoni Pasta
Bring the soup to a boil, then reduce the heat as needed to maintain a steady simmer. Cook until the pasta is al dente, stirring occasionally to keep the noodles from sticking together or settling on the bottom of the kettle.
Add the spinach or chopped kale to the soup. Cover the kettle and let it cook for a few minutes, until the greens are wilted and tender. Remove the cover and stir to distribute the greens throughout the soup.

Turn off the heat. Stir in the heavy cream ad Parmesan cheese until incorporated in the broth.
