Instructions
Prepare the blossoms. Check each blossom carefully for insects. Remove the stamen but leave a bit of the stem for easy handling. Pat dry with paper towels. The delicate petal can tear easily.

Make the batter. In a medium bowl or large bowl, whisk together the pancake mix, and cold beer until smooth and the consistency is like heavy cream.
1 Cup Pancake Batter Mix, ¾ Cup Beer
Heat the oil. Pour enough oil into a nonstick pan or frying pan to reach about ½ inch depth. Heat over medium heat until hot oil reaches ~350°F.

Fry the blossoms. Dip each blossom by the stem into the batter, letting excess batter drip off. Fry 2–3 minutes per side until golden brown. Remove with a slotted spoon and place on a wire rack or cooling rack over paper towels to drain excess oil.
Serve. Sprinkle with sea salt, black pepper, and a touch of lemon zest. Enjoy while warm for best results.
