Preheat your oven to 400°F and lightly spray a baking sheet with cooking spray.

Slice the onions into 1/4-inch thick rings and separate them.
2 Medium Yellow Onions
Place about 1 heaping tablespoon of shredded cheese in small circles on the baking sheet—roughly the size of your onion slices.
1 1/2 Cups Parmesan Cheese
Place one onion slice on top of each cheese pile.
Add another heaping tablespoon of cheese on top of each onion slice. Make sure the cheese touches around the edges—this is what creates that crispy “ring.”
Sprinkle garlic powder, paprika, and salt over each onion stack.
1 Teaspoon Garlic Powder, 1 Teaspoon Paprika, ¼ Teaspoon Salt
Bake for 12–15 minutes, until the cheese is melted and just starting to brown.
Broil on low for a few minutes until the cheese turns golden and crispy.
Let the onion rings sit for a few minutes so the cheese firms up and crisps perfectly.
Serve warm and enjoy as-is or with your favorite dipping sauce.
