Prepare the Pan. Preheat your oven to 350°F (175°C). Grease a 5-inch loaf pan or line it with parchment paper for easy removal. This also makes 3 mini loaf pans.
Make the Cinnamon Sugar Mixture. In a small bowl, combine 1/2 cup of the brown sugar with the cinnamon to create a cinnamon-sugar mixture. Set aside.
1 Tablespoon Ground Cinnamon, 1/2 Cup Brown Sugar
In a large bowl, whisk together the all-purpose flour, remaining white sugar, baking soda, and salt.
2 Cups All-Purpose Flour, 1 Cup White Sugar, 1 Teaspoon Baking Soda, 1/2 Teaspoon Salt
In a separate bowl, mix the milk, sour cream, melted butter, and vanilla extract until smooth.
1 Cup Whole Milk, 1/2 Cup Sour Cream, 1/4 Cup Butter, 1 Teaspoon Vanilla Extract
Pour the wet ingredients into the dry ingredients and mix on medium speed or with a wooden spoon until just combined. Avoid overmixing to keep the bread tender.
Layer the Cinnamon Swirl. Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture. Add the rest of the batter on top, then sprinkle with the remaining cinnamon mixture. Use a butter knife to gently swirl the cinnamon through the batter.
Optional: golden raisins
Place the loaf in the preheated oven and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Enjoy your delicious cinnamon quick bread fresh, toasted, or saved for later. Wrap it tightly in plastic wrap or place it in an airtight container to keep it moist and flavorful.
