These No-Bake Almond Bark Cookies, a cherished treat from my great-grandma Joy’s recipe collection, embody just that. Crafted with simple ingredients and no oven required, these cookies are an ideal addition to your homestead kitchen.
Combine the dates, sugar, butter, and eggs in a heavy skillet over low heat. Stir constantly and cook for 5-7 minutes until bubbly.
2/3 Cup White Sugar, 1 Cup Dates, 2 Large Eggs
Remove from heat and add the cereals, vanilla, coconut, and nuts. Mix thoroughly.
1 Cup Captain Crunch Cereal, 1 Cup Special K Cereal, 1 Teaspoon Vanilla, 1 Cup Coconut, ½ Cup Nuts
Let the mixture cool slightly, then shape it into 1-inch balls with greased hands or a cookie scoop. Place the cookies on a baking sheet lined with wax paper or parchment paper.
Allow the cookies to cool completely. Optional: Dip them in melted almond bark or drizzle it over the top for a decorative finish. Place on a prepared cookie sheet to let the chocolate harden.
