Peel, core and slice the apples about 1/4" thick. Add them to a medium bowl along with apple juice, brown sugar, butter, cinnamon, nutmeg, ginger, flour, and salt. Mix to combine. Spread the apple mixture evenly in the pan.

To make the topping, whisk together the flour, salt, brown sugar, cinnamon, and baking powder.

Add the cold butter, working it in to make an unevenly crumbly mixture. Spread the topping over the apples in the skillet.

Set the skillet on a baking sheet to catch any potential drips.
Bake the apple crisp for about 55-65 minutes, till it's bubbling and the top is golden brown.
Remove from the oven and allow it to cool for at least 20 minutes before serving.
If you serve the apple crisp hot, it may be quite soft. If you wait till it's completely cool, it'll firm up nicely.
Optionally, serve with vanilla ice cream and a drizzle of caramel sauce.
To make individual crisps, grease eight 8-ounce capacity baking dishes, and proceed with the recipe accordingly, baking the smaller crisps for 45 to 55 minutes.
Tips for the Best Apple Crisp
Slice the apples evenly. Try to keep the slices close to ¼-inch thick. This helps the apples cook at approximately the same rate.Don't skip the salt. A small amount of salt helps balance the sweetness and brings out the flavors of the apples and spices.Use cold butter for the topping. Cold butter helps create the crumbly texture that makes the topping so good.Don't pack the topping down. Gently spread the crumb mixture over the apples so there are plenty of little nooks and crannies for the topping to become golden and crisp.Bake until the filling is bubbling. A golden topping is important, but you also want to see the apple filling bubbling around the edges. This tells you the filling has cooked and thickened.Give it time to rest. Letting the crisp cool for at least 20 minutes allows the filling to thicken before serving.
