- ¾ Cup Beer lemon-lime soda (like Sprite or 7UP), or soda water

- Optional garnish: lemon zest Parmesan cheese, or fresh herbs. Pinch of salt and black pepper, to taste.
Instructions
- Prepare the blossoms. Check each blossom carefully for insects. Remove the stamen but leave a bit of the stem for easy handling. Pat dry with paper towels. The delicate petal can tear easily.18 Fresh Squash Blossoms
- Make the batter. In a medium bowl or large bowl, whisk together the pancake mix, and cold beer until smooth and the consistency is like heavy cream.1 Cup Pancake Batter Mix, ¾ Cup Beer
- Heat the oil. Pour enough oil into a nonstick pan or frying pan to reach about ½ inch depth. Heat over medium heat until hot oil reaches ~350°F.Enough oil for frying
- Fry the blossoms. Dip each blossom by the stem into the batter, letting excess batter drip off. Fry 2–3 minutes per side until golden brown. Remove with a slotted spoon and place on a wire rack or cooling rack over paper towels to drain excess oil.
