Ingredients

  • 2 Plums chopped
  • 1 English Cucumber chopped
  • ¼ Cup Red Onion Chopped
  • ½ Red Bell Pepper Chopped
  • 2 Tablespoons Fresh Cilantro or parsley chopped
  • ½ Teaspoon Salt
  • 2 Tablespoons Lime Juice fresh if you have it
  • 1 Tablespoon Rice Vinegar
  • 1 Tablespoon Sugar

Instructions

  • Add the washed and chopped the plums, bell pepper, cucumber, and cilantro to a medium bowl.
2 Plums, 1 English Cucumber, ½ Red Bell Pepper, 2 Tablespoons Fresh Cilantro
  • Finely chop the red onion and place it in a colander. Rinse under cold running water for about 30 seconds, then drain well. This helps mellow the onion’s sharp bite while keeping its crisp texture. Add to the bowl.
    ¼ Cup Red Onion
  • In a small bowl, stir together the lime juice, rice vinegar, sugar, and salt until the sugar dissolves.
½ Teaspoon Salt, 2 Tablespoons Lime Juice, 1 Tablespoon Rice Vinegar, 1 Tablespoon Sugar
  • Pour the dressing over the salsa and gently stir until everything is evenly coated.
  • For the best flavor, refrigerate for about 20 to 30 minutes before serving, although it’s delicious served immediately too.

Notes

Tips for the Best Salsa

Choose ripe but firm plums so they hold their shape after being diced.
English cucumbers are ideal because they have tender skin and very few seeds. Use your garden cucumbers if you have any. Just remove the seeds and some of the skin so it isn’t watery or bitter.
If your plums are especially sweet, reduce the sugar slightly. If they’re tart, an extra teaspoon of sugar balances the flavors nicely.
insing the chopped red onion under cold water softens its sharp flavor without affecting its crunch, making the salsa more balanced.
Fresh lime juice gives the brightest flavor, but bottled lime juice works in a pinch.

Ways to Serve Plum Cucumber Salsa

This fresh salsa pairs beautifully with:

  • Tortilla chips
  • Grilled chicken
  • Fish or shrimp tacos
  • Pork tenderloin
  • Burgers
  • Grilled salmon
  • Rice bowls
  • Cottage cheese
  • Mixed greens
  • Crostini or toasted baguette slices

Storage

Store leftovers in an airtight container in the refrigerator for up to two days. As the salsa sits, the fruit releases additional juices, so simply give it a quick stir before serving.

Freezing isn’t recommended because the cucumber and plums lose their crisp texture after thawing.

Can I make this salsa ahead of time?

Yes. It’s actually even better after chilling for 20 to 30 minutes, giving the flavors time to blend.

Can I use yellow plums?

Absolutely. Red, black, or yellow plums all work well. Each variety offers a slightly different level of sweetness and color.

Is this recipe nutritious?

Yes. It’s loaded with fresh fruit and vegetables and contains very little added sugar, making it a light and refreshing side dish.

Can I use parsley instead of cilantro?

Definitely. Fresh parsley creates a milder flavor that’s just as delicious if you’re not a fan of cilantro.
